LEMON GREEK POTATOES

Ingredients

1 Tbsp. Mediterranean Greek Seasoning Blend
2 Tbsp. lemon juice
1 Tbsp. olive oil
Salt & pepper, to taste
4 large potatoes, scrubbed, cut into wedges

Instructions

Preheat oven to 400°F. In a large bowl combine Mediterranean Greek Seasoning Blend, lemon juice, olive oil, salt and pepper. Whisk until well mixed. Add potato wedges, and toss to coat. Place on a parchment lined baking sheet and bake for 35-40 minutes.
If you like to cook once and eat twice, cook additional potatoes to make fried potatoes, to add to a soup, or frittata.
